Sugar Free Chocolate Banana Bites


Ingredients
Sugar Free Chocolate Chips­ 2 cups
Coconut oil­ 2 tablespoons
Vanilla Extract­ 1 tsp
Bananas­ 3­4 ripe, sliced as desired

Instructions
  1. Peel and slice your bananas as desired.
  2. Insert a stick or toothpick into the base of each banana slice and then place each individual slice onto a baking sheet that has been prepped with wax paper, parchment paper or a silicon mat. Cover with plastic wrap and freeze for 1­3 hours.
  3. In a microwave bowl, place the chocolate chips, coconut oil, and vanilla extract. Microwave for one minute and then stir. Microwave 30 seconds and stir. Repeat every 30 seconds until the chocolate is melted.
  4. Alternatively, you can combine the chocolate chips, coconut oil, and vanilla in the top of a double boiler or using your favorite method on the stove.
  5. Once the chocolate has melted, remove the bananas from the freezer. Dip each individual banana slice into the chocolate, covering as much of the slice as desired.Tip­ use an additional fork or spoon to help disperse the chocolate and to help support the banana while you transport it. Return the chocolate covered banana slice to the pan add any desired toppings. Repeat this process until all of the banana slices have been dipped.
  6. Cover the chocolate covered banana tray with plastic wrap and return to the freezer until ready to serve.
