Frosted Chocolate Sugar Cookies


Ingredients

Cookies
1 cup butter softened
1¼ cups sugar divided
¾ cup powdered sugar
¾ cup oil
2 eggs
1½ tsp cornstarch
½ tsp baking soda
½ tsp cream of tartar
1 tsp salt
½ cup baking cocoa
5 cups flour

Chocolate Buttercream Frosting
1 cup butter softened
4 cups powdered sugar
¼ cup baking cocoa
½ cup cream
1 tsp vanilla

Directions

For the cookies
  1. Preheat the oven to 350 F degrees. Place a silicone baking mat or parchment paper onto cookie sheets.
  2. In a mixing bowl or the bowl of your stand mixer, cream together the butter, sugar and powdered sugar.
  3. Add the oil and eggs and mix until well combined.
  4. Add the cornstarch, baking soda, cream of tartar, salt, cocoa and flour. Mix to combine.
  5. Roll balls of dough into 1½ inch balls and place onto cookie sheets.
  6. In a shallow bowl place remaining ¼ cup sugar. Dip the bottom of a smooth glass into the sugar and flatten cookies until the edges begin to crack.
  7. Bake for 10 minutes and remove from oven. Place cookies on wire racks and allow to cool. Place in the fridge until ready to frost.

For the frosting
  1. Place butter in a large bowl. Add the powdered sugar and cream and beat until fluffy. Add the vanilla and beat until well combined.
  2. Frost cold cookies and enjoy.
