Blueberry-Topped No-Bake Lemon Cheesecake Cups


Puff Pastry Cups
2 sheets puff pastry cut into equal squares *I use Pepperidge Farm

No-Bake Lemon Cheesecake
2 8 oz packages cream cheese *full fat
1 14 oz can sweetened condensed milk *full fat
1/4 Cup lemon juice *freshly squeezed
1 teaspoon lemon zest
1 teaspoon vanilla extract
1 packet non-flavored gelatin

Perfect Blueberry Sauce
1 Cup blueberries
1/2 Cup water
1/4 Cup sugar
1 Tablespoon cornstarch mixed with 1 Tablespoon water
1/4 teaspoon vanilla extract
1 teaspoon lemon juice

  1. For the Puff Pastry Cups: set out your puff pastry to defrost for up to 40 minutes. Also, set out the cream cheese at this time so it can come to room temperature. Once the pastry is defrosted, preheat your oven to 400 degrees F. Roll out the pastry so that you can fit a 12-cupcake pan over it. Scour the dough where you will need to cut it into 12 equal sized squares using the cupcake pan as your guide, then use a fork to poke holes in the dough. Place each square over the inverted cupcake pan, then place a Silpat mat or parchment paper over the top and then a baking sheet. This will help keep the pastry from rising too much while cooking. Bake 12-15 minutes or until lightly browned and cooked through.
  2. For the No-Bake Lemon Cheesecake: beat the cream cheese on low speed in an electric mixer. Slowly add the condensed milk, lemon juice, lemon zest, vanilla extract, and non-flavored gelatin until well combined. Spoon the mixture into the puff pastry cups and place in the refrigerator to set for 2-3 hours.
  3. For the Perfect Blueberry Sauce: combine all the ingredients in a saucepan and bring to a boil. Reduce heat to simmer, stirring frequently, until the sauce thickens. Top each cheesecake cup with a spoonful of sauce. The sauce can be made ahead of time and kept in the refrigerator until needed.
