Cheesy Broccoli Rice Casserole Recipe

1 1/2 cups uncooked white rice
1 onion, chopped
1 tablespoon butter
1 cup white wine
2 1/2 cups chicken broth
2 1/2 cups light cream
2 tablespoons Dijon mustard
5 cups broccoli florets
4 cups cheese, shredded

  1. Preheat your oven to 350 degrees.
  2. Cook rice according to package directions.
  3. While your rice is cooking, sauté your chopped onions in butter until translucent.
  4. Add white wine and chicken broth and bring to a boil. Continue to boil until liquid reduced by about half.
  5. Whisk together your cream and Dijon mustard until well blended.
  6. Lower heat to low, and remove a little of chicken broth and wine mixture and add cream to that to temper it. Then add the cream mixture to the chicken broth wine mixture, and stir to blend.
  7. Add broccoli to the sauce and cook until crisp-tender.
  8. Remove from heat, add cooked rice and cheese, setting aside a little cheese for on top of the casserole.
  9. Place the broccoli rice mixture into a baking dish, cover with tin foil, and bake for 30 minutes. Remove tin foil for the last few minutes of cooking.
