Homemade Cream of Tomato Soup Recipe


Ingredients:
2 tbsp olive oil
1/2 onion, chopped finely
1/2 tbsp minced garlic
1 28 – 32 oz can of crushed or pureed tomatoes
1/4 tsp baking soda
1 tbsp dried parsley
salt and pepper to taste
1 tbsp fresh basil
1 tbsp honey
2-3 cups of skim or low fat milk

Directions:
  1. Saute the onion and garlic in the olive oil until it is translucent.
  2. Add the tomatoes, baking soda, parsley and salt and pepper.
  3. Bring to a boil. Simmer for 10 minutes over medium low heat.
  4. Add the honey and basil. Check and add more salt and pepper as needed.
  5. Add in 2 to 3 cups of skim or low fat milk depending on whether you prefer your cream of tomato soup thicker or thinner. Warm & serve.
