Moru Curry


INGREDIENTS
Butter milk - ½ litre
Coconut oil - 2 tbsp
Mustard seeds - 1 tsp
Fenugreek seeds - ½ tsp
Cumin seeds - ½ tsp
Dry red chilies - 3-4
Curry leaves - 10-12
Ginger - 1 tsp ( Grated )
Garlic - 5-6 cloves ( Crushed )
Green chilies - 2 ( Slit into halves )
Shallots - 6-7 ( Thinly sliced )
Turmeric powder - ½ tsp
Salt to taste

INSTRUCTIONS
  1. Heat oil in a pan.
  2. When the oil is hot, add mustard seeds, fenugreek seeds, cumin seeds and dry red chilies.
  3. Let them splutter for a few seconds.
  4. Add curry leaves, ginger, garlic and green chilies and fry for a few seconds.
  5. Add shallots and fry till slightly browned.
  6. Add turmeric powder and switch off the heat.
  7. Add buttermilk and mix well.
  8. Switch on the heat and cook the curry on low heat til it just starts to boil.
  9. Do not let the curry boil.
  10. Keep stirring continuously.
  11. Switch off the heat.
  12. Add salt and mix well.
  13. Serve Moru Curry with steamed rice.
