Almond Flour Chocolate Brownies Recipe


8 oz bittersweet chocolate (minimum 70% cocoa solids)
1 cup butter (2 sticks)
1 tsp. vanilla extract
1 tsp. almond extract
1 cup sugar
3 large eggs (beaten)
1 1/2 cups almond flour (I buy at Trader Joe's)
1 cup chopped almonds (toasted is best)

  1. Preheat the oven 325ºF. Melt the chocolate and butter gently over a low heat in a heavy-based saucepan.
  2. Take the pan off the heat, mix in the vanilla and sugar, and let it cool a little.
  3. Beat the eggs into the pan along with the almond flour and chopped almonds. Prepare a 9 inch square baking pan with cooking spray.
  4. Bake for 25-30 minutes. Allow to cool before serving.
