Paleo Brownies with Avocado Ganache Recipe


Ingredients

For paleo brownies:
4 medium eggs
¾ cup honey
¾ cup almond milk
1½ cups finely ground almonds
1 cup cocoa powder
pinch of salt

For avocado ganache:
2 large ripe avocados
¾ cup cocoa powder
½ cup honey

Instructions

For paleo brownies:
  1. Pre-heat oven to 175 ºC (350 ºF).
  2. Line a baking tray with baking/greaseproof paper (I’ve used an 8×8 inch baking tray).
  3. In a bowl, whisk together eggs, honey and almond milk.
  4. Add ground almonds, cocoa powder and salt.
  5. Mix well until everything is evenly distributed.
  6. Transfer the brownie batter into the baking tray and bake in the pre-heated oven at 175 ºC (350 ºF) for 15 – 18 minutes or until an inserted toothpick comes out slightly dirty. (15 minutes gives avery fudgy brownie, 18 minutes a more cake-like brownie.)
  7. Allow to cool.

For avocado ganache:
  1. In a blender or food processor, blend together the avocados, honey and cocoa powder until silky smooth.
  2. Spread the ganache onto the cooled brownies.

Serving:
  1. Cut the brownies into pieces of the desired size (which is totally open to interpretation) and enjoy!

Storage:
  1. These paleo brownies keep well in a closed container in a cool dry place for 3 – 4 days.
