Chocolate Mousse with Chocolate Dirt


INGREDIENTS: 

Chocolate Mousse
300g dark eating chocolate – chopped 
50g unsalted butter 
3 eggs separated 
55g caster sugar 
300ml thickened cream 

Chocolate Dirt
125g caster sugar 
125g almond meal 
75g plain flour
50g cocoa powder 
60g unsalted butter 

DIRECTIONS:

Chocolate Mousse
  1. Combine chocolate and butter in small saucepan
  2. Stir over low heat until smooth
  3. Remove from heat
  4. Stir in egg yolks, one at time
  5. Transfer mixture to large bowl.
Whip cream
  1. Whisk egg white until soft peak
  2. Add sugar and whisk until sugar dissolves
  3. Fold in cream into chocolate mixture then fold in egg white mixture in two batches.
  4. Divide between 8 cups
  5. Cover with cling film
  6. Refrigerate for 2 hours until set
Chocolate Dirt
  1. Pre-heat oven to 150C
  2. melt butter
  3. Line baking tray with grease paper
  4. Mix all dry ingredients in a bowl
  5. Add melted butter into dry ingredients 
  6. Mix thoroughly until it represent ‘soil’- like look
  7. Bake for 10-15 minutes
  8. Cool before dividing into 8 cups above.
